This corn dip is a must-have at any of our family gatherings. Our family loves it! You only need a few ingredients and you can throw it all together in minutes.

I recently brought this dish to my monthly book club get-together and all of the ladies raved about how good it was! It is a savory dish and can be served hot or cold, but I always serve it cold.

HERE IS WHAT YOU NEED TO MAKE THIS CORN DIP

  • Fiesta Corn or MexiCorn
  • White or Yellow Corn
  • Shredded Fiesta or Mexican Cheese
  • Mayonnaise
  • Sour Cream
  • Taco Seasoning
  • Chopped Green Onion
  • Salt and Pepper to Taste

This recipe is so simple to make! You will need a large mixing bowl for this recipe. You need to just simply combine all of the ingredients well, and you are good to go!

This is the creamiest corn dip! It is so quick and easy to make!

You can use as much green onion as you like. I typically use about 1/4 cup. I also add a little salt and pepper to taste, but you can leave that out if you would like. I have also made this with and without the taco seasoning. I prefer it with the seasoning, but it is great both ways.

I love to serve this corn dip with tortilla chips or Fritos scoops. It is creamy and delicious! I have also served it with Ritz crackers and it is really good with those too. If you feel inclined to do so, you could also add diced jalapeños for a spicy kick!

I also refrigerate my corn dip for about an hour or so before I am ready to serve it. You do not have to do this if you don’t want to, but I feel like the flavors blend together better when refrigerated for a little while before hand.

Easy Corn Dip Recipe

Ingredients

  • 2 Cans of Fiesta Corn or MexiCorn (drained)
  • 1 Can of White or Yellow Corn (drained)
  • 2 Cups of Shredded Fiesta or Mexican Cheese
  • 1 Cup of Mayonnaise
  • 1 Cup of Sour Cream
  • 1 T. Taco Seasoning
  • 1/4 Cup of Chopped Green Onion
  • Salt and Pepper to Taste

Instructions

    1. Drain the corn

    2. In a large mixing bowl combine all ingredients well

    3. Refrigerate for one hour for best results

    4. Enjoy with corn chips, tortillai chips, or crackers
