Sausage Pancake Muffins are easy to make and so delicious! These remind me of a fast food sausage McGriddle, but healthier. These muffins are simple to prep and take about 15 minutes to cook. My kids and I absolutely love eating these for breakfast, and they are a great way to get in a good amount of protein in the mornings.

All you need to make homemade sausage pancake muffins are a few ingredients. This recipe makes about 18 muffins, or 48 mini muffins.

Ingredients to make McGriddle style sausage pancake muffins.

WHAT YOU NEED TO MAKE SAUSAGE PANCAKE MUFFINS

  • Pancake Mix (I use Kodiak Power Cakes mix for extra protein)
  • Breakfast Sausage of Choice
  • Shredded Cheese
  • Maple Syrup
  • Water

To make these sausage muffins, you first need to brown your ground sausage and let cool. Preheat your oven to 400 degrees. Then, in a large mixing bowl combine 2 cups of pancake mix, 1 and 1/2 cups of water, 1 cup of shredded cheese ( I prefer to use sharp cheddar cheese), and 1/4 cup of Maple syrup. Next, add in one pound of cooked pork sausage and mix well.

You can add eggs to these sausage pancake muffins and it is really good also. If you are adding in eggs, you can add four eggs to the mixture and mix well, before adding in the ground sausage.

Next, pour the mixture into greased muffin pans, filling about 3/4 of the way full. I love to use silicone muffin pans to make mine. You can use mini muffin pans to make muffin bites. If you are using mini muffin pans, this recipe will make about 48 muffins. Bake in a 400 degree oven for about 15 minutes.

Let the muffins cool slightly before removing from the pan. These are great to serve with maple syrup drizzled over the top, on on the side for dipping. Enjoy!
